Yesterday, we invited Lalo, aka the Asado Maestro, to come over and make a specialty chicken dish for some people who were going to come to our house. He started off building the fire underneath a large outdoor stove/pan. First, he threw in onions and butter (lots). Then peppers and carrots and many different spices, some I knew, some I didn’t. Next he threw in the chicken. Then he poured in little white wine and tomato juice. Then he let it simmer for a couple of hours. I’m not sure what word to use for it, it was amazing. It had such a rich flavor. I could probably eat it at least 5 times a week. It reminded me of a book I read when I was little called Stone Soup, it would always make me so hungry when I read it.
